WHITES | Spring
We’re here to bring you a very fresh take on whites for this season.
We are delving into Verdelho, putting Pinot Blanc on a pedestal, going gangbusters for Grenache Blanc and taking a fresh look at Dolce Fresco, a sweet take on Chenin. Looking a little left of centre, this line-up is still approachable, eminently drinkable, and primed with food pairing potential.
Bright lemon and lime zest aromatics. Green apple and honeysuckle palate. A rich mouthfeel supported by a delicate spiciness and subtle minerality.
Hand-picked then whole bunch pressed to old French oak hogsheads for barrel fermentation on solids. Natural fermentation kicked off after about 4 days post-pressing with a steady temperature increase in the cold corners of the cellar. Malolactic fermentation was not promoted but probably partially occurred.
Enjoy with richer white meats in particular North African, Spanish or Indian cuisine.
Tropical fruits, pawpaw, green mangoes and citrus. Medium palate is crunchy, tangy and textural. Spicy and savoury characters. Lip-smacking dry with tangy acidity and a clean, refreshing finish.
The hand-picked fruit was whole bunch pressed, followed by natural fermentation, on full solids, in seasoned French oak barriques. The wild fermentation and lees stirring has introduced complexity, yet the crisp natural acidity has been retained by inhibiting malolactic fermentation throughout the four-month maturation period.
Enjoy young and with Seafood.
Lime sherbet, rose water, and pink grapefruit. Tightly zipped along the palate with a delightful satiating acidity. Slatey oyster shell note. Gratifying lime zest juiciness on the finish.
The fruit was picked in the cool of the early morning and processed immediately to capture the purest juice and hence the pure flavours. The juice was transferred to French oak hogsheads and puncheons and wild fermentation encouraged. Left on lees for 5 months the wine was then blended and bottled.
Enjoy with Crab Cakes and aioli.
Succulent stone fruit aromas. Early medium sweetness of ripe peaches. Soft natural acidity and attractive mineral edge. Finishes on a drier note.
Made from 100% Chenin Blanc, ferment arrested early to retain natural sugars and bottled early with no oak treatment.
Enjoy with Summer Berry Pudding.
