MEET… Jono Hersey of The French Wine Centre

The French Wine Centre presents a hand-selected folio of the finest French wines, imported from more than 20 producers throughout France.

General Manager Jono Hersey visits France twice a year – visiting vineyards, producers and of course, sampling the goods.

We recently sat down with Jono to get his two cents on French wine (and the perfect omelette).

Give us the run down… When it comes to French wine, for me it’s all about the terroir - and how that translates onto the palate. The minerality, the structure, the flavour and the perfume. I am never out there to find ‘perfection’ in wine. I am out there to find wine with a message, something that sparks thought. Something people can contemplate, compare, and enjoy (often).

Three French varieties to discover… I prefer the classics; Aligote, Chardonnay and Pinot Noir. My pursuit in wine is that of terroir, drinkability and quality. These three distinct varieties are the perfect vessel for just that. My tip for an engrossing discovery experience – try aged examples.

Chablis… A flinty northern-Burgundy white, best enjoyed with a plate of cuisses de grenouille (yes, frogs legs). Sometimes sautéed, sometimes lightly fried – the mildly sweet mildly earthy meat of frog legs is delicate, light and tender. Simply seasoned with butter (of course), garlic, and some freshly minced parsley – magnifique.

Champagne… A crisp glass of finely beaded bubbles with an Omelette au Natural, French style, with a dusting of porcini salt (must be French style, not country style – this is very important). The airy and delicate folds of a French omelette are cloud like. The cooking – gentle and barely browning the exterior. A simple pairing on the surface, but incredibly spectacular in its execution.

Beaujolais… This lighter-bodied red from Northern Rhone or southern Burgundy (both are correct in a way!) is an easy going red, which is going to shine alongside just about anything you can BBQ. Think charred crispy edges on snags. A swig of Beaujolais will put a spotlight on the BBQs heaty breath and charry kisses.
